Ingredients
  

Dough
  • 3 cups All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 1.5 cups Warm water
  • 0.25 cup Olive oil
  • 1 teaspoon Salt
Topping
  • 2 tablespoons Olive oil
  • 1 teaspoon Flaky sea salt
  • 1 tablespoon Fresh rosemary chopped
Optional Enhancements
  • 0.5 cup Cherry tomatoes halved
  • 0.25 cup Kalamata olives pitted and sliced

Method
 

Preparation
  1. In a large bowl, dissolve yeast in warm water with a pinch of sugar; let it sit for 5 minutes until foamy.
  2. Add flour, olive oil, and salt to the yeast mixture, mixing until a shaggy dough forms.
  3. Knead on a lightly floured surface for about 8-10 minutes until the dough is smooth and elastic.
First Rise
  1. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  2. Gently punch down the dough to release air, then transfer it to a 9x13 inch baking pan coated with olive oil.
Second Rise & Baking
  1. Dimple the dough deeply with your fingers, drizzle with olive oil, sprinkle with sea salt and rosemary, and add optional toppings.
  2. Let it rise again for 30 minutes, preheat oven to 400°F (200°C), then bake for 20-25 minutes until golden brown.
Finishing
  1. Remove from oven, let cool slightly, and serve warm.

Notes

For an extra crispy crust, preheat your baking pan in the oven before adding the dough.
