  • 15 ounces canned chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 2-4 tablespoons cold water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • paprika (for garnish)
  • fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Combine the chickpeas, tahini, lemon juice, garlic, and salt in a food processor. Process until a thick paste forms, scraping down the sides as needed.
  2. With the food processor running, gradually add 2-4 tablespoons of cold water, one tablespoon at a time, until the hummus reaches your desired creamy consistency.
  3. Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with paprika and fresh parsley before serving.

Notes

For an extra smooth hummus, remove the skins from the chickpeas before processing. You can also adjust the amount of lemon juice and garlic to your taste preference.
