Chicken Satay
- Combine chicken pieces with coconut milk, soy sauce, brown sugar, curry powder, garlic powder, ginger powder, and salt in a bowl, then marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Thread the marinated chicken onto the pre-soaked wooden skewers.
- Preheat your grill to medium-high heat, then lightly oil the grates to prevent sticking.
- Grill the chicken skewers for 2-3 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks.
Peanut Sauce
- Whisk together creamy peanut butter, coconut milk, lime juice, soy sauce, brown sugar, chili garlic sauce, and sesame oil in a small bowl until smooth.
- If the sauce is too thick, add a little more coconut milk or water until it reaches your desired consistency.
Notes
For extra flavor, you can add a pinch of cayenne pepper to the chicken marinade. Serve the satay immediately with the warm peanut sauce and a sprinkle of chopped peanuts or fresh cilantro if desired.
