Baking the Cake
- Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Whisk together flour, sugar, baking soda, cinnamon, and salt in a large bowl.
- In another bowl, whisk eggs, oil, and vanilla extract; then stir the wet ingredients into the dry ingredients until just combined.
- Fold in the grated carrots and pecans (if using), then divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean; cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
Making the Frosting
- Beat cream cheese and butter with an electric mixer until smooth and creamy.
- Gradually add powdered sugar, beating until smooth, then beat in vanilla extract.
Assembling the Cake
- Once cakes are completely cool, spread a layer of frosting over the top of one cake layer.
- Place the second cake layer on top and frost the top and sides of the entire cake.
Notes
For extra moisture, add 1/2 cup of crushed pineapple (drained) to the batter. Ensure cream cheese and butter are at room temperature for a smooth frosting.
