  • 3 cups grated carrots

Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Baking the Cake
  1. Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Whisk together flour, sugar, baking soda, cinnamon, and salt in a large bowl.
  3. In another bowl, whisk eggs, oil, and vanilla extract; then stir the wet ingredients into the dry ingredients until just combined.
  4. Fold in the grated carrots and pecans (if using), then divide the batter evenly between the prepared cake pans.
  5. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean; cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
Making the Frosting
  1. Beat cream cheese and butter with an electric mixer until smooth and creamy.
  2. Gradually add powdered sugar, beating until smooth, then beat in vanilla extract.
Assembling the Cake
  1. Once cakes are completely cool, spread a layer of frosting over the top of one cake layer.
  2. Place the second cake layer on top and frost the top and sides of the entire cake.

Notes

For extra moisture, add 1/2 cup of crushed pineapple (drained) to the batter. Ensure cream cheese and butter are at room temperature for a smooth frosting.
