  • 2 lbs Potatoes peeled and quartered
  • 1 lb Carrots peeled and cut into large chunks
  • 1 large Onion chopped
  • 2 cups Beef Broth
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Garlic Powder
  • 1/2 tsp Dried Thyme
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Method
 

Preparation
  1. Season the beef roast generously with salt, pepper, garlic powder, and dried thyme.
  2. Heat a large Dutch oven or oven-safe pot over medium-high heat with a tablespoon of oil.
  3. Sear the roast on all sides until browned, then remove it from the pot and set aside.
Cooking
  1. Add chopped onions to the pot and sauté until softened, about 5 minutes.
  2. Deglaze the pot with beef broth, scraping up any browned bits from the bottom.
  3. Stir in Worcestershire sauce, then return the seared roast to the pot.
Simmer
  1. Add the quartered potatoes and carrot chunks around the roast in the pot.
  2. Cover the pot and transfer it to a preheated oven at 325°F (160°C).
  3. Cook for 2.5 to 3 hours, or until the beef is fork-tender and the vegetables are soft.
Serving
  1. Carefully remove the pot roast from the oven.
  2. Let it rest for 15 minutes before slicing and serving with the cooked vegetables and pan juices.
