Preparation
- Wash and peel the potatoes, then cut them into 1-inch cubes. Place the cubed potatoes in a large pot and cover with generously salted cold water.
- Bring the water to a boil over medium-high heat and cook the potatoes for 10-15 minutes, or until they are fork-tender but not mushy. Drain the potatoes thoroughly and let them cool completely.
Dressing
- In a large bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar. Season the dressing with salt and pepper to taste, until it's well combined.
Assembly
- Add the cooled potatoes, chopped celery, and diced red onion to the bowl with the dressing. Gently fold all the ingredients together until the potatoes are evenly coated, taking care not to mash them.
Chilling
- Cover the bowl and refrigerate the potato salad for at least 30 minutes to allow the flavors to meld. For best results, chill for a few hours or overnight before serving.
Notes
For extra flavor, consider adding fresh dill or chives to the potato salad. Adjust the amount of mayonnaise and mustard to your personal preference for creaminess and tang. Serve chilled as a side dish at picnics or barbecues.
