  • 2 lbs Beef stewing beef, cut into 1-inch cubes
  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 3 medium Carrots, peeled and sliced
  • 2 stalks Celery, sliced
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 2 large Potatoes, peeled and cubed
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup All-purpose flour for dredging

Method
 

Preparation
  1. Dredge the beef cubes in flour, then heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches on all sides to develop flavor, then remove and set aside.
  2. Add the chopped onion, carrots, and celery to the pot, sautéing until softened for about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the beef broth, scraping up any browned bits from the bottom of the pot. Stir in the tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
  4. Return the browned beef to the pot, bring the liquid to a simmer, then reduce heat to low, cover, and cook for 1.5-2 hours, or until the beef is nearly tender.
  5. Add the cubed potatoes to the stew and continue to simmer, covered, for another 30-45 minutes, or until the potatoes are tender and the stew has thickened.
  6. Remove the bay leaves, taste, and season with salt and black pepper as needed before serving hot.

Notes

For best results, allow the stew to simmer slowly; this develops deeper flavors and ensures the beef is exceptionally tender. Adjust seasoning to your preference before serving.
