Preparation
- In a large bowl, mash the black beans with a fork until chunky. Do not mash completely; some whole beans add texture.
Cooking
- Heat olive oil in a skillet over medium heat, then sauté the chopped onion, bell pepper, and minced garlic for about 5-7 minutes until softened.
- Combine the sautéed vegetables with the mashed black beans, bread crumbs, egg, chili powder, cumin, salt, and pepper in the large bowl.
- Mix thoroughly until all ingredients are well combined and the mixture can hold its shape. If the mixture is too wet, add more bread crumbs.
- Form the mixture into four equal patties, approximately one inch thick.
- Cook the patties in a lightly oiled pan over medium heat for 4-5 minutes per side, or until golden brown and heated through.
Serving
- Serve the veggie burgers on buns with your favorite toppings such as lettuce, tomato, onion, pickles, and condiments.
Notes
For an extra kick, add a pinch of cayenne pepper to the patty mixture. You can also bake these burgers at 375°F (190°C) for 20-25 minutes, flipping halfway, instead of pan-frying.
