  • 15 ounce black beans, rinsed and drained
  • 0.5 cup bread crumbs
  • 1 egg
  • 0.25 cup onion, finely chopped
  • 0.25 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil

Method
 

Preparation
  1. In a large bowl, mash the black beans with a fork until chunky. Do not mash completely; some whole beans add texture.
Cooking
  1. Heat olive oil in a skillet over medium heat, then sauté the chopped onion, bell pepper, and minced garlic for about 5-7 minutes until softened.
  2. Combine the sautéed vegetables with the mashed black beans, bread crumbs, egg, chili powder, cumin, salt, and pepper in the large bowl.
  3. Mix thoroughly until all ingredients are well combined and the mixture can hold its shape. If the mixture is too wet, add more bread crumbs.
  4. Form the mixture into four equal patties, approximately one inch thick.
  5. Cook the patties in a lightly oiled pan over medium heat for 4-5 minutes per side, or until golden brown and heated through.
Serving
  1. Serve the veggie burgers on buns with your favorite toppings such as lettuce, tomato, onion, pickles, and condiments.

Notes

For an extra kick, add a pinch of cayenne pepper to the patty mixture. You can also bake these burgers at 375°F (190°C) for 20-25 minutes, flipping halfway, instead of pan-frying.
