  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Equipment

  • Gardening Tools (trowel, spade)
  • Large oven-safe dish
  • Cutting Board
  • Knife

Method

Growing the Vegetables
  1. Select appropriate varieties of eggplant, zucchini, bell peppers, tomatoes, onion, and garlic for late summer harvest, ensuring they are suitable for your climate and growing conditions.
  2. Prepare your garden beds by enriching the soil with compost and ensuring adequate drainage; plant seeds or seedlings according to package directions, spacing them correctly for optimal growth.
  3. Provide consistent watering, especially during dry spells, and fertilize as needed, offering support for climbing plants like tomatoes and bell peppers.
  4. Monitor plants for pests and diseases, addressing any issues promptly with organic solutions, and harvest vegetables at their peak ripeness in late summer for the best flavor and texture.
Preparing the Ratatouille
  1. Preheat your oven to 375°F (190°C). Wash and chop all harvested vegetables into uniform, bite-sized pieces.
  2. In a large oven-safe dish, toss the chopped vegetables with olive oil, fresh herbs, salt, and black pepper, ensuring they are evenly coated.
  3. Roast the mixture in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
  4. Serve the ratatouille warm as a side dish or main course, garnished with extra fresh basil or a drizzle of olive oil if desired.

Notes

For the best flavor, use freshly harvested herbs. Adjust seasoning to taste. Ratatouille can be stored in an airtight container for up to 3 days in the refrigerator and reheated gently.
