Step 1: Prepare the Sauce and Chicken
- In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to create the stir-fry sauce.
- In a separate small bowl, dissolve cornstarch in water to form a slurry, then set aside.
Step 2: Cook the Chicken and Vegetables
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned and cooked through, then remove from the skillet and set aside.
- Add broccoli, carrots, and bell peppers to the same skillet and stir-fry for 5-7 minutes until vegetables are tender-crisp.
Step 3: Combine and Serve
- Return the cooked chicken to the skillet with the vegetables.

Notes
