  • 1 can (13.5 oz) coconut milk full-fat
  • 1 tbsp ginger grated
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Peel and dice the sweet potatoes, then chop the onion and mince the garlic.
  2. In a large pot, sauté the chopped onion in a little oil over medium heat until softened, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pot and cook for another minute until fragrant.
Cooking the Soup
  1. Stir in the diced sweet potatoes, vegetable broth, cinnamon, and nutmeg. Bring the mixture to a boil.
  2. Reduce heat, cover, and simmer for 20-25 minutes, or until the sweet potatoes are very tender.
  3. Carefully transfer the soup to a blender and blend until completely smooth. Alternatively, use an immersion blender.
  4. Return the blended soup to the pot, stir in the coconut milk, salt, and black pepper, and heat through gently.
Serving
  1. Serve the creamy sweet potato soup hot, garnished with fresh herbs as desired.

Notes

For an extra touch of flavor, roast the sweet potatoes before adding them to the soup. You can also add a pinch of cayenne pepper for a subtle kick.
