Chicken
  • 1.5 lbs Chicken breasts boneless, skinless
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Olive oil
Pasta & Sauce
  • 12 ounces Fettuccine
  • 1.5 cups Heavy cream
  • 0.5 cup Chicken broth
  • 0.5 cup Parmesan cheese grated
  • 3 cloves Garlic minced
  • 0.5 Onion small, chopped
  • 1 Bell pepper red or green, chopped
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Fresh parsley chopped, for garnish

Method
 

Preparation
  1. Season chicken breasts with Cajun seasoning; then, in a large skillet, cook the chicken in olive oil until browned and cooked through, about 6-8 minutes per side.
  2. Remove chicken from pan, slice into strips, and set aside while you prepare the sauce.
  3. Cook pasta according to package directions until al dente; drain and set aside.
Sauce & Assembly
  1. In the same skillet, sauté minced garlic, chopped onion, and bell pepper until softened, about 3-5 minutes.
  2. Pour in heavy cream and chicken broth, bringing the mixture to a simmer.
  3. Stir in grated Parmesan cheese until melted and the sauce thickens slightly.
  4. Add the cooked pasta and sliced chicken back into the skillet, tossing to coat everything evenly with the sauce.
  5. Season with salt and black pepper to taste, then garnish with fresh parsley before serving.

Notes

For an extra kick, add a pinch of cayenne pepper to the sauce. You can also add other vegetables like spinach or mushrooms for more flavor and nutrients.
