  • 3 cups cooked rice
  • 1 lb shrimp
  • 2 eggs
  • 1 cup peas and carrots
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 green onions chopped
Seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Prepare the rice the day before or ensure it is cold to prevent stickiness.
  2. Whisk the eggs in a bowl and set aside; chop the green onions, separating white and green parts.
Cooking
  1. Heat vegetable oil in a large skillet or wok over medium-high heat, then add shrimp and cook until pink, about 2-3 minutes per side; remove and set aside.
  2. Add a bit more oil if needed, then pour in the whisked eggs and scramble until fully cooked; remove and set aside.
  3. Add the white parts of the green onions, peas, and carrots to the skillet, stirring for 2-3 minutes.
  4. Add the cold rice, soy sauce, sesame oil, salt, and pepper to the skillet, stirring constantly to combine and heat through.
  5. Return the cooked shrimp and scrambled eggs to the skillet, tossing everything together to ensure it is well mixed and heated.
  6. Stir in the green parts of the green onions just before serving.
Serving
  1. Serve the shrimp fried rice immediately as a main dish.

Notes

For best results, use day-old rice as it fries better and has a less sticky texture. Adjust soy sauce to taste, and feel free to add other vegetables like corn or bell peppers.
