Filling
  • 0.5 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.25 cup unsalted butter, softened
Icing
  • 1 cup powdered sugar
  • 2 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon milk

Method
 

Making the Dough
  1. Activate the yeast by combining warm milk, a pinch of sugar, and yeast in a bowl; let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the flour, remaining sugar, and salt, then create a well in the center.
  3. Pour the yeast mixture into the well along with melted butter and egg, mixing until a shaggy dough forms.
  4. Knead the dough on a lightly floured surface for 5-7 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1 hour, or until doubled in size.
Preparing the Filling and Shaping
  1. While the dough rises, combine brown sugar and cinnamon in a small bowl for the filling.
  2. Punch down the risen dough and roll it into a 12x9-inch rectangle on a lightly floured surface.
  3. Spread the softened butter evenly over the dough, leaving a small border, then sprinkle with the cinnamon-sugar mixture.
  4. Starting from the long edge, tightly roll up the dough and pinch the seam to seal it.
  5. Cut the log into four equal pieces, about 1.5 inches thick, using a sharp knife or dental floss.
Baking and Icing
  1. Place the cinnamon rolls in a greased 8x8-inch baking dish, cover, and let them rise for another 30 minutes.
  2. Preheat your oven to 375°F (190°C) and bake the rolls for 18-22 minutes until they are golden brown.
  3. While the rolls cool slightly, whisk together powdered sugar, softened cream cheese and butter, vanilla extract, and milk until smooth.
  4. Spread the cream cheese icing generously over the warm cinnamon rolls and serve immediately.

Notes

For extra flavor, add a pinch of nutmeg to the cinnamon filling. If you don't have a warm place for rising, you can use a slightly warm oven (turned off).
