Grilling the Corn
- Preheat your grill to medium-high heat.
- Grill the corn directly on the grates, turning occasionally until kernels are tender-crisp and slightly charred, which will take about 10-12 minutes.
Assembling the Elote
- Once grilled, remove the corn from the heat.
- Carefully spread mayonnaise generously over each ear of corn.
- Sprinkle evenly with crumbled Cotija cheese and chili powder.
- Serve immediately with lime wedges for squeezing.
Notes
For an extra kick, add a pinch of cayenne pepper to the chili powder. You can also substitute Cotija cheese with crumbled feta or Parmesan for a similar salty flavor.
