Prepare Chicken
- Cut chicken breasts into 1-inch cubes and combine with lemon juice, olive oil, oregano, garlic powder, salt, and pepper in a bowl. Marinate for at least 15 minutes or up to 30 minutes for best flavor.
Cook Chicken
- Heat a large skillet or grill pan over medium-high heat with a drizzle of olive oil. Cook the marinated chicken for 5-7 minutes, stirring occasionally, until it is cooked through and lightly browned.
Make Tzatziki Sauce
- In a medium bowl, combine Greek yogurt, grated cucumber, fresh dill, minced garlic, lemon juice, and salt. Mix well and set aside.
Assemble Bowls
- Divide the cooked quinoa or rice evenly among three meal prep containers. Arrange the cooked chicken, cherry tomatoes, diced cucumber, red onion, Kalamata olives, and crumbled feta cheese over the quinoa.
Serve
- Spoon a generous dollop of tzatziki sauce over each bowl just before serving or portion it into small containers to add right before eating. Garnish with fresh parsley.
Notes
For extra flavor, you can marinate the chicken overnight. If you prefer a vegetarian option, swap the chicken for chickpeas or grilled halloumi cheese.
