  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 yellow onions, chopped
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 14.5 oz can diced tomatoes, undrained
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1.5 lbs potatoes, peeled and cubed
  • salt to taste
  • black pepper to taste

Method
 

Preparation
  1. Season the beef cubes generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef in batches on all sides, then remove and set aside.
  3. Add the chopped onions, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir for 1-2 minutes to cook off the raw flour taste.
  5. Gradually pour in the beef broth, scraping up any browned bits from the bottom of the pot. Stir in the diced tomatoes, tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
Cooking
  1. Return the browned beef to the pot. Bring the stew to a simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours, or until the beef is very tender.
  2. Add the cubed potatoes to the pot and continue to simmer, covered, for another 30-45 minutes, or until the potatoes are tender.
  3. Remove the bay leaves before serving. Taste and adjust seasoning with salt and pepper as needed.

Notes

For extra flavor, you can add a splash of red wine along with the beef broth. This stew tastes even better the next day, making it a great meal prep option.
