Ingredients
  

Base
  • 1 cup Cooked quinoa
  • 15 oz Black beans, rinsed and drained
Vegetables
  • 0.5 cup Corn kernels (fresh or frozen)
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, finely diced
  • 1 Avocado, diced
Dressing
  • 2 tbsp Lime juice
  • 1 tbsp Olive oil
  • 2 tbsp Cilantro, chopped
  • 0.5 tsp Cumin
  • Salt and pepper to taste

Method
 

Prepare the Base
  1. In a large bowl, combine the cooked quinoa and rinsed black beans.
Add the Vegetables
  1. Stir in the corn kernels, halved cherry tomatoes, finely diced red onion, and diced avocado.
Make the Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, chopped cilantro, cumin, salt, and pepper.
Assemble the Bowl
  1. Pour the dressing over the quinoa and vegetable mixture, then toss gently to combine.

Notes

For an extra protein boost, add grilled chicken, tofu, or hard-boiled eggs. This bowl is also great for meal prep; simply store the dressing separately and add it before serving to prevent the ingredients from getting soggy.
