  • 1.5 cups orzo pasta
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, diced
  • 0.5 small red onion, thinly sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh parsley, chopped
  • 1 lemon, juiced
  • 0.25 cup olive oil
  • 1 tsp dried oregano
  • salt and pepper to taste

Method
 

Preparation
  1. Cook orzo according to package directions; drain and rinse with cold water.
  2. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, and fresh parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, dried oregano, salt, and pepper.
  4. Pour the dressing over the orzo mixture and toss to combine; serve immediately or chill for later.

Notes

For extra flavor, toast the orzo lightly in a dry pan before cooking. You can also add grilled chicken or shrimp for a more substantial meal.
