  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and sliced
  • 1.5 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh basil or parsley, chopped for garnish

Method
 

Cooking Steps
  1. Season chicken breasts with salt, pepper, and oregano on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan. Bring the sauce to a simmer.
  5. Stir in grated Parmesan cheese until melted and the sauce thickens. Add spinach and cook until it wilts, about 2-3 minutes.
  6. Return the cooked chicken to the skillet, spooning the sauce over it. Simmer for a few more minutes to heat through and allow the flavors to meld.
  7. Garnish with fresh basil or parsley and serve immediately, perhaps with pasta or rice.

Notes

This dish pairs wonderfully with a side of pasta, rice, or a crusty bread to soak up the delicious sauce. For a spicier kick, add a pinch of red pepper flakes with the garlic and sun-dried tomatoes. You can also add mushrooms or bell peppers for extra vegetables.
