Ingredients
  

Main
  • 4 medium Russet potatoes
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Toppings
  • 1 cup Cheddar cheese shredded
  • 1/2 cup Sour cream
  • 4 strips Bacon cooked and crumbled
  • 2 Green onions sliced

Method
 

Main
  1. Preheat oven to 400°F (200°C). Scrub potatoes, pat dry, and pierce several times with a fork. Rub with olive oil, salt, and pepper, then bake for 60 minutes or until tender.
  2. Once potatoes are done, carefully slice each potato lengthwise, making sure not to cut all the way through. Fluff the inside with a fork.
  3. Load with your favorite toppings such as shredded cheese, sour cream, crumbled bacon, and sliced green onions. Serve immediately.

Notes

For extra crispy skin, sprinkle a little extra salt directly on the potato skin before baking.
