Ingredients
  

Pasta
  • 340 g Spaghetti or your preferred pasta
Sauce
  • 250 g Ricotta cheese
  • 1 Lemon, zested and juiced about 2 tablespoons juice
  • 60 g Parmesan cheese, grated
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Method
 

Cooking Pasta
  1. Cook the pasta according to package directions until al dente. Before draining, reserve about 1 cup of the pasta cooking water.
Prepare Sauce
  1. While the pasta cooks, combine ricotta cheese, lemon zest, lemon juice, grated Parmesan, olive oil, salt, and pepper in a large bowl. Mix until well combined and creamy.
Combine
  1. Drain the cooked pasta and add it directly to the bowl with the ricotta mixture. Toss well, adding a splash of the reserved pasta water as needed to reach a creamy consistency.
Serve
  1. Serve immediately, garnished with extra lemon zest, Parmesan cheese, and a grind of black pepper if desired.
