Method
 

Preparation
  1. Slice the onions thinly and melt butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced onions to the pot and cook for 30-40 minutes, stirring occasionally, until deeply caramelized and golden brown.
  3. Pour in the dry white wine and scrape up any browned bits from the bottom of the pot.
  4. Stir in the beef broth, salt, and pepper, then bring the soup to a simmer and cook for at least 20 minutes to allow the flavors to meld.
  5. Preheat your broiler and arrange baguette slices on a baking sheet. Toast them until lightly golden.
  6. Ladle the hot soup into oven-safe bowls, place a toasted baguette slice on top of each, and sprinkle with grated Gruyère cheese.
  7. Broil for 2-3 minutes, or until the cheese is melted and bubbly and golden brown.

Notes

For an extra rich flavor, you can deglaze the pot with a splash of brandy or sherry before adding the wine.
