Preparation
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then remove and let cool.
- Reduce oven temperature to 325°F (160°C).
Cheesecake Filling
- Beat cream cheese and sugar until smooth in a large bowl.
- Mix in pumpkin puree, sour cream, eggs, vanilla extract, pumpkin pie spice, and cinnamon until just combined.
- Pour the filling over the cooled crust.
- Bake for 50-60 minutes, or until the edges are set and the center jiggles slightly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from oven, cool completely on a wire rack, then chill in the refrigerator for at least 4 hours or overnight before serving.
Notes
For best results, ensure all dairy ingredients are at room temperature. A water bath can be used for an even creamier cheesecake, but it's not strictly necessary for this recipe.
