Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into three individual balls and place them on the prepared baking sheet. Using a fork, gently press down on each cookie dough ball to create a crosshatch pattern.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
