Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into three individual balls and place them on the prepared baking sheet. Using a fork, gently press down on each cookie dough ball to create a crosshatch pattern.
Baking
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra peanut butter flavor, you can add a few extra chopped peanuts to the dough. These cookies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
