Growing Corn
- Plant corn seeds in well-drained soil after the last frost, ensuring adequate spacing between seeds.
- Water regularly, especially during dry periods, and fertilize when the plants are about 1 foot tall.
- Harvest corn when the tassels turn brown and the kernels are plump and milky, which is usually in 60-100 days.
Basic Corn Chowder
- In a large pot, melt butter, then sauté chopped onion and celery until softened.
- Stir in flour and cook for one minute, then gradually add broth, stirring until smooth.
- Add potatoes and corn kernels, bring to a simmer, and cook until vegetables are tender, about 15-20 minutes.
- Stir in milk, salt, and pepper; heat through but do not boil.
Spicy Corn Chowder
- Prepare the Basic Corn Chowder as directed, and while sautéing the vegetables, add minced jalapeño and chili powder.
- Continue with the remaining steps for the Basic Corn Chowder, adjusting seasoning as needed.
Creamy Bacon Corn Chowder
- Prepare the Basic Corn Chowder as directed.
- Just before serving, stir in the cooked and crumbled bacon, heavy cream, and fresh chives, heating gently until warmed through.
Notes
For best results, use fresh corn from your garden. You can adjust the level of spiciness in the spicy chowder by adding more or less jalapeño and chili powder. For a richer creamy chowder, use full-fat milk and cream.
