  • 2 tbsp Olive oil
  • Herbs and spices (e.g., thyme, rosemary, paprika) to taste

  • 1 cup Quinoa or brown rice

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and chop the seasonal vegetables into bite-sized pieces.
  2. Toss the chopped vegetables with olive oil, herbs, and spices on a baking sheet.
Cooking
  1. Roast the vegetables for 20-25 minutes, or until tender and slightly caramelized.
  2. While the vegetables are roasting, cook your chosen lean protein source according to its package instructions.
Serving
  1. Combine the roasted vegetables with the cooked protein and any optional additions like quinoa or brown rice.
  2. Garnish with nuts or seeds if desired and serve warm.

Notes

Adjust seasoning to your preference. Feel free to experiment with different fall vegetables like butternut squash, acorn squash, or parsnips. For an extra flavour boost, drizzle with balsamic glaze before serving.
