Cooking Pasta
- Cook the fettuccine pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
Prepare the Sauce
- Heat olive oil in a large skillet over medium heat, then add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, bring the mixture to a simmer, and cook for 5 minutes, allowing it to slightly thicken.
- Stir in chopped sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
- Add the cooked pasta to the skillet, along with Parmesan cheese, and toss to combine; if needed, use some reserved pasta water to reach desired consistency.
- Season with salt and pepper to taste, and serve immediately.
Notes
Add grilled chicken or shrimp for a more substantial meal. Adjust the amount of red pepper flakes for desired spiciness. Fresh basil can be added for extra flavor.
