Pasta
  • 12 ounces Fettuccine pasta
Sauce
  • 1 tablespoon Olive oil
  • 3 cloves Garlic, minced
  • 1.5 cups Chicken broth
  • 1 cup Heavy cream
  • 0.5 cup Sun-dried tomatoes, chopped
  • 3 cups Fresh spinach
  • 0.5 cup Parmesan cheese, grated
  • Salt to taste
  • Black pepper to taste

Method
 

Cooking Pasta
  1. Cook the fettuccine pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
Prepare the Sauce
  1. Heat olive oil in a large skillet over medium heat, then add minced garlic and cook for 1 minute until fragrant.
  2. Pour in chicken broth and heavy cream, bring the mixture to a simmer, and cook for 5 minutes, allowing it to slightly thicken.
  3. Stir in chopped sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
  4. Add the cooked pasta to the skillet, along with Parmesan cheese, and toss to combine; if needed, use some reserved pasta water to reach desired consistency.
  5. Season with salt and pepper to taste, and serve immediately.

Notes

Add grilled chicken or shrimp for a more substantial meal. Adjust the amount of red pepper flakes for desired spiciness. Fresh basil can be added for extra flavor.
