  • 4 Chicken Breasts, Boneless, Skinless about 1.5 lbs, sliced in half horizontally for thinner cutlets
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 3 cloves Garlic, Minced
  • 0.5 cup Sun-dried Tomatoes packed in oil, drained and sliced
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 0.5 cup Parmesan Cheese, Grated
  • 5 ounces Fresh Spinach
  • 2 tablespoons Fresh Basil, Chopped for garnish, optional

Method
 

Sear Chicken and Sauté Aromatics
  1. Season chicken with salt and pepper, then sear in olive oil in a large skillet until golden brown and cooked through. Remove chicken and set aside.
  2. Add garlic and sun-dried tomatoes to the same skillet, cooking until fragrant.
Create Cream Sauce and Finish Dish
  1. Pour in chicken broth and heavy cream, bringing to a simmer. Stir in Parmesan cheese until melted and the sauce slightly thickens.
  2. Return chicken to the skillet, add fresh spinach, and cook until the spinach wilts. Garnish with fresh basil, if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the sauce. This dish pairs well with pasta, rice, or crusty bread.
