Coleslaw
  • 4 cups green cabbage shredded
  • 2 cups carrots shredded
Dressing
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation
  1. In a large bowl, combine the shredded green cabbage and carrots.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the cabbage and carrot mixture.
  2. Toss thoroughly until all ingredients are well coated.
Serve
  1. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For best results, prepare the coleslaw a few hours in advance and keep it refrigerated. You can also add a touch of celery seeds for extra flavor.
