  • 2 cans sweet corn kernels (15 oz each, drained)
  • 1 can creamed corn (15 oz)
  • 1 cup sour cream
  • 0.5 cup melted butter
  • 1 package cornbread mix (e.g., Jiffy, 8.5 oz)
  • 1 cup shredded cheddar cheese (optional, for topping)

Method
 

Preparation
  1. In a large mixing bowl, combine the drained sweet corn kernels, creamed corn, sour cream, and melted butter.
  2. Add the cornbread mix to the bowl and stir until all ingredients are well combined and there are no dry spots from the mix.
  3. Pour the entire mixture into a greased 9x13 inch casserole dish and spread evenly.
Baking & Serving
  1. Bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until the casserole is golden brown and set in the center.
  2. If desired, sprinkle the shredded cheddar cheese over the top during the last 10 minutes of baking.
  3. Remove from oven and let it rest for a few minutes before serving warm.

Notes

For an extra kick, add a pinch of cayenne pepper or a can of diced green chilies to the mixture. This casserole can be made ahead of time and refrigerated; just bring to room temperature before baking and add a few extra minutes to the bake time if needed.
