  • 4 slices bacon diced
  • 1 medium onion diced
  • 2 celery stalks diced
  • 2 medium potatoes peeled and diced
  • 1/4 cup all-purpose flour
  • 2 cups clam juice
  • 2 cups milk
  • 1 cup heavy cream
  • 2 6.5 oz cans canned chopped clams drained
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Cook diced bacon in a large pot or Dutch oven over medium heat until crispy, then remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon grease in the pot.
  2. Add diced onion and celery to the pot with bacon grease and cook until softened, about 5-7 minutes.
  3. Stir in diced potatoes and flour, cooking for 2 minutes, then gradually whisk in clam juice and milk until smooth.
  4. Bring the mixture to a simmer, then reduce heat and cook until potatoes are tender and the soup has thickened, about 15-20 minutes.
  5. Stir in heavy cream, drained clams, salt, and pepper, heating gently until warmed through without boiling.

Notes

For an extra touch, garnish with fresh parsley or chives before serving.
