  • 2 cups Shredded cooked chicken
  • 2 tbsp Olive oil or butter
  • 1 medium Onion chopped
  • 2 stalks Celery chopped
  • 2 medium Carrots chopped
  • 1/4 cup All-purpose flour
  • 4 cups Chicken broth
  • 1 cup Milk (whole or 2%)
  • 1.5 cups Cooked wild rice
  • 1 tsp Dried thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Preparation
  1. In a large pot, heat olive oil or butter over medium heat. Add chopped onion, celery, and carrots, then cook for 5-7 minutes until softened.
  2. Stir in the all-purpose flour and cook for 1 minute. Gradually whisk in the chicken broth until smooth, then add the milk and bring to a simmer, stirring constantly.
  3. Add the cooked chicken, wild rice, dried thyme, salt, and black pepper to the pot, stirring to combine.
  4. Simmer for 5-10 minutes to heat through and allow the flavors to meld. Garnish with fresh parsley before serving.

Notes

For an even richer soup, use heavy cream instead of milk. You can also add other vegetables like mushrooms or spinach for extra flavor and nutrients.
