- In a large pot, heat olive oil or butter over medium heat. Add chopped onion, celery, and carrots, then cook for 5-7 minutes until softened.
- Stir in the all-purpose flour and cook for 1 minute. Gradually whisk in the chicken broth until smooth, then add the milk and bring to a simmer, stirring constantly.
- Add the cooked chicken, wild rice, dried thyme, salt, and black pepper to the pot, stirring to combine.

Notes
For an even richer soup, use heavy cream instead of milk. You can also add other vegetables like mushrooms or spinach for extra flavor and nutrients.
