Ingredients

Taco Bowl
  • 1 lb lean ground turkey or lean ground beef
  • 1 packet taco seasoning low sodium
  • 0.5 cup water
  • 4 cups cauliflower rice steamed
  • 4 cups lettuce shredded romaine
  • 1 cup diced tomatoes
Toppings
  • 0.5 cup salsa sugar-free
  • 0.5 cup non-fat Greek yogurt as a sour cream substitute
  • 1 medium avocado diced
  • 1 lime for wedges

Equipment

  • Large skillet
  • Steamer
  • Serving bowls
  • Cutting board and knife

Method

Prepare the Base
  1. Brown the ground turkey in a large skillet over medium heat, breaking it apart as it cooks, then drain any excess fat.
  2. Add the taco seasoning and water to the skillet, stir well, and simmer for 5-7 minutes until the liquid has mostly evaporated and the meat is fully flavored.
  3. While the meat simmers, steam the cauliflower rice according to package instructions until tender-crisp.
Assemble the Bowl
  1. Divide the steamed cauliflower rice among four serving bowls, forming the base of each taco bowl.
  2. Top the cauliflower rice with the seasoned ground turkey, shredded lettuce, and diced tomatoes.
  3. Garnish each bowl with a spoonful of salsa, non-fat Greek yogurt, diced avocado, and a lime wedge for squeezing.

Notes

Customize your taco bowl with your favorite low-calorie vegetables like bell peppers, corn, or black beans. For an extra kick, add a pinch of cayenne pepper to the seasoning.
