Preparation
- Preheat your oven to 400°F (200°C) and grease an 8x8 inch baking pan. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
Mixing
- In a separate bowl, whisk together milk, egg, and vegetable oil. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
Baking
- Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let it cool slightly before slicing and serving.
Notes
For a sweeter cornbread, add an extra tablespoon of sugar. To make it savory, add shredded cheese or chopped jalapeños to the batter.
