Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
Mixing Wet Ingredients
  1. In a separate medium bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  2. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
Finishing the Batter
  1. Carefully stir in the hot water until the batter is smooth and a little thin.

Baking

Notes

For an extra rich flavor, you can add 1/2 teaspoon of instant espresso powder to the hot water. Make sure not to overmix the batter, as this can lead to dry cupcakes.
