  • 2 cups spinach fresh

Cooking Instructions
  1. Cook the pasta according to package directions in salted water until al dente, then reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat and sauté minced garlic for about 1 minute until fragrant.
  3. Add chopped sun-dried tomatoes to the skillet and cook for 2-3 minutes, stirring occasionally.
  4. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  5. Stir in the grated Parmesan cheese until it melts and the sauce thickens nicely.
  6. Add the fresh spinach and cook until it wilts, then season with salt and black pepper to taste.
  7. Toss the cooked and drained pasta with the creamy sauce, adding a splash of reserved pasta water if needed to reach your desired consistency.
