  • 1 medium cucumber peeled and chopped
  • 1 medium red bell pepper chopped
  • 0.25 cup red onion chopped
  • 2 tbsp lime juice
  • 0.25 cup fresh mint packed
  • salt and pepper to taste

Method
 

Preparation
  1. Combine the cubed watermelon, chopped cucumber, red bell pepper, and red onion in a blender.
  2. Add the lime juice and fresh mint to the blender and blend until smooth.

Notes
