Method
 

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add diced carrots, celery, and onion and cook for 5-7 minutes until softened.
  2. Stir in minced garlic, dried rosemary, and dried thyme, cooking for another minute until fragrant.
  3. Add vegetable broth, diced tomatoes, rinsed and drained cannellini beans, salt, and pepper to the pot, then bring the mixture to a boil.
Cooking
  1. Reduce heat to low, cover, and let the soup simmer for 30 minutes to allow the flavors to meld.
  2. After simmering, stir in the fresh spinach and cook for 2-3 minutes until it wilts.
Serving
  1. Taste and adjust seasonings as needed, then ladle the hot soup into bowls.

Notes
