Ingredients

Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
Flavorings
  • 1/2 cup chocolate chips
  • 1/2 cup blueberries
  • 1 tablespoon lemon zest
  • 1/2 cup chopped nuts
  • 1/4 cup coconut flakes

Equipment

  • 9-inch round baking pan
  • large mixing bowls
  • whisk
  • electric mixer (optional)
  • wooden skewer
  • wire rack

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and grease and flour a 9-inch round baking pan.
  2. In a medium bowl, whisk together the flour, brown sugar, and cinnamon for the streusel topping, then stir in the melted butter until crumbly and set aside.
Making the Cake Batter
  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the remaining flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined and being careful not to overmix.
Assembling and Baking
  1. Divide the batter into five equal portions in separate small bowls.
  2. Gently fold a different flavoring into each portion of batter: chocolate chips, blueberries, lemon zest, chopped nuts, and coconut flakes.
  3. Spoon alternating dollops of each flavored batter into the prepared baking pan, creating a marbled effect.
  4. Sprinkle the streusel topping evenly over the batter.
  5. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the coffee cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra moisture, you can add a simple glaze made from powdered sugar and milk after the cake has cooled. Experiment with other flavor combinations like orange zest, cranberries, or different types of nuts.
