Crust Prep
- Crush the digestive biscuits into fine crumbs, then mix them with the melted unsalted butter until well combined.
- Press the mixture firmly into the bottom of a 20cm springform tin, then chill the crust in the refrigerator for at least 30 minutes.
Filling Prep
- In a large bowl, beat the softened cream cheese with icing sugar, lemon juice, and vanilla extract until smooth.
- In a separate bowl, whip the double cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assemble & Chill
- Pour the cheesecake filling over the chilled biscuit base and smooth the top with a spatula.
- Refrigerate the cheesecake for a minimum of 4 hours, or preferably overnight, until it is firmly set.
Serve
- Carefully remove the cheesecake from the springform tin, then decorate with fresh berries and mint leaves if desired before slicing and serving.
Notes
For best results, make the cheesecake the day before you plan to serve it to allow ample time for chilling and setting. You can experiment with different biscuit types for the crust, such as shortbread or Oreo cookies. To add a different flavor, consider adding citrus zest to the filling or a fruit coulis on top.
