  • 2 Zucchini medium, chopped
  • 1 pint Cherry tomatoes
  • 1 Bell pepper any color, sliced
  • 2 tbsp Olive oil
  • 1 Lemon juiced
  • 1 tsp Garlic powder
  • 0.5 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
Optional Garnish
  • Fresh basil chopped
For serving
  • 1 cup Quinoa or Rice cooked
Marinade
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 0.5 tsp Ginger powder

Method
 

Preparation
  1. Cut the chicken into 1-inch pieces and combine them with olive oil, lemon juice, garlic powder, oregano, salt, and pepper in a bowl. For an optional marinade, you can also add soy sauce, honey, and ginger powder to the chicken and marinate for 15 minutes.
  2. Chop all the vegetables and set them aside.
Cooking
  1. Heat a large skillet or grill pan over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, or until browned and cooked through.
  2. Add the chopped zucchini, cherry tomatoes, and bell pepper to the skillet with the cooked chicken. Sauté for 5-8 minutes, until the vegetables are tender-crisp.
  3. Remove from heat and stir in fresh basil, if using.
Serving
  1. Serve immediately with cooked quinoa or rice for a complete meal.
