  • 4 large chicken breasts, boneless, skinless
  • 2 cups marinara sauce
  • 1.5 cups mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 0.5 cup all-purpose flour
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Oven
  • Baking dish
  • Shallow dishes (3)
  • Large skillet
  • Tongs

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it.
  2. Pat the chicken breasts dry and season them with salt and pepper.
  3. Set up a breading station with three shallow dishes: one with flour, one with beaten egg, and one with Italian breadcrumbs.
Cooking
  1. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly in breadcrumbs.
  2. Heat olive oil in a large skillet over medium-high heat and pan-fry the breaded chicken for 2-3 minutes per side until golden brown.
  3. Transfer the chicken to the prepared baking dish, spread marinara sauce over each piece, and sprinkle with mozzarella and Parmesan cheeses.
  4. Bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Serving
  1. Remove from oven and let stand for a few minutes before serving with your favorite pasta or a side salad.

Notes

For extra crispiness, you can broil the chicken for the last minute or two of cooking. Serve with a side of spaghetti or a fresh salad for a complete meal.
