Prepare the Chicken
- In a medium bowl, combine the ground chicken with soy sauce, rice vinegar, sesame oil, cornstarch, minced ginger, and minced garlic; mix well.
- Heat a large skillet or wok over medium-high heat. Add the chicken mixture and cook, breaking it up with a spoon, until the chicken is browned and cooked through.
Add Vegetables and Sauce
- Stir in the diced water chestnuts and sliced scallions; cook for another 2-3 minutes until slightly softened.
- In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha (if using) for the sauce.
- Pour the sauce over the chicken mixture and toss to coat evenly; cook for 1-2 minutes until heated through and slightly thickened.
Serve
- Spoon the chicken mixture into individual butter lettuce leaves.
- Garnish with chopped peanuts and fresh cilantro, if desired, and serve immediately.
Notes
For extra crunch, you can add some shredded carrots or bell peppers to the chicken mixture. You can also use ground turkey instead of chicken.
