Gravy
- Separate the fat from the turkey drippings using a fat separator or by chilling and skimming.
- Melt butter in a saucepan, whisk in flour to create a roux, and cook for 1-2 minutes until golden brown.
- Gradually whisk in the defatted drippings and broth, bring to a simmer, and cook until thickened, seasoning with salt and pepper.
Notes
For extra flavor, consider adding a splash of white wine or sherry to the gravy while it simmers. If your gravy is too thick, thin it with a little more broth; if it's too thin, simmer longer or whisk in a cornstarch slurry (1 tsp cornstarch mixed with 1 tsp cold water) and bring to a boil.
