Preparation
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and jalapeño, cooking for another minute until fragrant.
Cooking
- Stir in chili powder, cumin, oregano, salt, and black pepper, cooking for 1 minute.
- Add chicken breasts, chicken broth, and diced tomatoes to the pot. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, until chicken is cooked through.
- Remove chicken from the pot, shred it using two forks, and then return the shredded chicken to the pot.
- Stir in black beans, corn, and simmer for another 5-10 minutes, allowing flavors to meld and corn to heat through.
Serving
- Ladle the hot soup into bowls and garnish with crushed tortilla chips, sliced avocado, sour cream, fresh cilantro, and lime wedges.
Notes
For an extra kick, leave some seeds in the jalapeño or add a pinch of cayenne pepper. You can also customize toppings with shredded cheese or a dollop of guacamole.
