Ingredients
  

Cookie Dough
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
Filling
  • 1/4 cup raspberry jam
Garnish
  • 2 tbsp powdered sugar

Method
 

Prepare the Dough
  1. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg yolk and vanilla extract until well combined.
  3. Gradually add the all-purpose flour and mix until a soft dough forms.
Chill and Roll
  1. Divide the dough into two equal portions, flatten each into a disk, and wrap in plastic wrap.
  2. Chill the dough for at least 30 minutes in the refrigerator.
  3. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness.
Cut and Bake
  1. Using a fluted round cookie cutter, cut out 10 circles from the rolled dough.
  2. From 5 of these circles, use a smaller cutter to make a small hole in the center.
  3. Place the cookies on a baking sheet lined with parchment paper and bake at 350°F (175°C) for 10-12 minutes, or until lightly golden at the edges.
Assemble the Cookies
  1. Once cooled, spread about 1 teaspoon of raspberry jam onto each whole cookie.
  2. Dust the cookies with holes with powdered sugar.
  3. Carefully place a sugared cookie top onto a jam-covered cookie bottom to form a sandwich.

Notes

For best results, ensure your butter is truly softened to room temperature. You can experiment with different jams for the filling, such as apricot or strawberry. These cookies store well in an airtight container for up to 3-4 days.
