  • 1 kg Chicken cut into pieces
  • 500 g Basmati Rice
  • 3 Onions sliced
  • 2 Tomatoes chopped
  • 1 cup Yogurt
  • 2 tbsp Ginger-Garlic Paste
  • 3-4 Green Chilies slit
  • 1/2 cup Mint Leaves
  • 1/2 cup Coriander Leaves
  • 2 tbsp Biryani Masala
  • 1 tsp Red Chili Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • to taste Salt
  • 1/2 cup Oil/Ghee

Method
 

Preparation
  1. Marinate the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, biryani masala, and salt for at least 30 minutes, or preferably overnight.
  2. Soak basmati rice in water for 30 minutes, then drain and par-boil it until 70% cooked. Drain and set aside.
Cooking
  1. Heat oil or ghee in a heavy-bottomed pot and fry the sliced onions until golden brown.
  2. Add chopped tomatoes and green chilies to the pot and cook until they soften.
  3. Stir in the marinated chicken and cook for 10-15 minutes until it is partially cooked.
  4. Layer half of the par-boiled rice over the chicken, then sprinkle with mint and coriander leaves.
  5. Add the remaining rice, then top with more mint and coriander leaves, and a drizzle of ghee if desired.
  6. Cover the pot tightly and cook on low heat for 20-25 minutes, allowing the biryani to steam and flavors to meld.
Serving
  1. Gently fluff the biryani with a fork before serving, ensuring all layers are mixed.

Notes

For best results, use good quality basmati rice and fresh ingredients. Adjust spice levels to your preference. A splash of saffron milk can add a beautiful color and aroma to your biryani.
