Preparation
- Gather all your desired ingredients, including tortillas, cheese, and any optional fillings you wish to add.
- Prepare any fillings by cooking and dicing them as needed.
Cooking the Quesadillas
- Heat a large skillet or griddle over medium heat and add about half a teaspoon of cooking oil.
- Place one tortilla in the hot skillet, then sprinkle about a quarter cup of cheese evenly over half of the tortilla.
- Add a small amount of your preferred optional fillings over the cheese if desired, then sprinkle a little more cheese on top of the fillings.
- Fold the empty half of the tortilla over the filled half and press down gently with a spatula.
- Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly.
- Remove the cooked quesadilla from the skillet and set aside on a plate; repeat the process for the remaining four tortillas, adding more oil as needed.
Serving
- Cut each quesadilla into wedges and serve immediately with salsa, sour cream, or guacamole as desired.
Notes
For extra crispiness, you can lightly butter the tortillas before placing them in the skillet. Feel free to experiment with different types of cheese and fillings to suit your taste.
