- Wash the tomatoes thoroughly, then core and quarter them.
- In a large pot, heat the olive oil over medium heat, then add the minced garlic and cook until fragrant, about 1 minute.
- Add the quartered tomatoes to the pot, bring to a simmer, and cook for 30-40 minutes, stirring occasionally, until softened.
- Carefully pass the cooked tomatoes through a food mill or sieve to remove skins and seeds, returning the smooth sauce to the pot.
- Simmer the sauce for another 20-30 minutes, or until it reaches your desired consistency.
- Stir in the fresh basil, salt, and pepper to taste, then serve warm or store for later use.
Notes
For a richer flavor, you can roast the tomatoes before simmering. This sauce can be frozen for up to 3 months.
